Qualifications
Strong Chef de Partie or previous Junior Sous Chef Experience
Must be proficient in all stations in the kitchen
Excellent leadership skills and ability to implement and control quality and standards
A highly motivated, dynamic individual with creative flair
Willing to learn and adapt to new ideas and concepts
Hungry for personal development
Thrive on taking responsibility and working in an empowered environment
Team player
Knowledge in hygiene and sanitation rules and regulations

Responsibilities
Be part of the control of Food Preparation in all Kitchens
Help oversee all food production, act as tournant during service time on sections as and when required
Run day to day kitchen in absence of Sous chef
Be involved in Food Cost / Wastage
Have an understanding of Wage Costs
Comply With Legal Requirements
To Work Closely With All Team To Train, Develop & Motivate
Comply With Company Requirements
Help to implement cleaning rotas and monitor liaising with Chief Steward
Oversee all hygiene policy
Liaise with Exec and Exec Sous Chef, report on a daily basis any developments or problems
Help organise & monitor food stocks and ordering
Ensure GP & wage costs are in line with company expectations
Liaise with chefs on a day to day basis to ensure all areas are running to Hotel
& Company expectations
Help Monitor staff feeding to give the best quality under budgeted restraints
Meet customers whenever required to discuss their requirements and give advice
Set, monitor & maintain standards in conjunction
with Exec Chef
Attend all meetings as requested
With Exec Chef set measurable objectives for the team & monitor through regular appraisals
Keep up with modern trends in food production & cooking skills
Have a relationship with outside associations, hotels & businesses to promote the Hotel & Company
Take part in interviews & selection procedures where appropriate
Safeguard the company’s property at all times
Report all accidents and near misses as per hotel procedure and record the same in the occurrence book
Be aware of all relevant legislation including COSHH
Be aware of fire prevention & evacuation procedures
Liaise with maintenance keeping them informed of any problems / issues
To ensure that all Kitchen staff are groomed as per the hotel grooming standards
Participate in the hotel’s social responsibility programme
To comply with company regulations as stipulated in staff handbook, regarding uniform, timekeeping and general conduct.
To comply with any statutory and legal requirement for fire, licensing, health and safety and to ensure that you are working in accordance with these requirements.
Job Requirements
Required education: Diploma, Associate's degree
Required relevant work experience: 3 years
