Job SummaryFood and beverage supervisor is responsible for supervising the daily Food & Beverage outlet operations including overall quality and service staff performance of the designated outlet.
The Supervisor will work daily with the staff to ensure Guest Satisfaction in the outlet by training, coaching, developing and correcting behavior of the service staff
Qualifications
Certificate/Diploma in Hotel Management course
2 years experience in 4/5 star property in F&B
Good organisational/communication skills
A flexible, highly motivated, proactive and ‘can do’ working style
Ability to demonstrate good supervisory skills and to work effectively as part of a team
Proven drive and enthusiasm for food sales
Responsibilities
To conduct the functions of the Manager in his absence
Directs and supervises the activities of the Hostesses, Waiter/ess, Cashiers and Barmen.
Responsible for guiding all service and bar personnel assigned in the outlet, in the performance of their duties and responsibilities.
Responsible for checking the sufficiency of operating equipment and supplies for both table and bar service.
To ensure that all guests are welcomed at the door, escorted and sat in a courteous and helpful manner and that their requirements are met promptly
Supervises staff activities to maximize revenue and minimize costs.
Assign duties, responsibilities, and work stations to employees in accordance with work requirements.
Inspect supplies, equipment, and work areas to ensure efficient service and conformance to standards.
To supervise the posting of orders, service of food & drink, billing and allocation of discounts.
Responsible for proper accounting of all guest cheques and staff tips
Proposes an effective duty roster to ensure sufficiency of manpower in accordance to volume of business.
To originate for approval by F&B Manager the general stores requisition, beverage requisition and the kitchen requisition as per weekly/ daily schedules planned.
Checks at the start and at the end of the shift that all service attendants complete their opening and closing duties
Prepares details required for pre-meal briefing - out of stock items, reservations, daily specials, VIP reservations, situations of previous day and corrections if any, food & Beverage knowledge test, etc,
To conduct daily briefings and ensure that shift beginning and shift end briefings are being held at the beginning and end of each shift
Responsible for supervising staff attendance and work performance on daily basis.
Assists the F & B Cost Controller in Conducting month end inventory of beverage supplies, operating supplies, food supplies and steward for operating equipment.
Reports breakage and losses in the
outlet
Coordinates with other outlet heads and kitchen section heads for reservations, special arrangements and other activities in the Hotel
Responsible for inspecting table cover layouts and equipment placement and settings before commencement of service to ensure smooth flow of service
To communicate with the Sous Chef on particular guests’ requirements, and maintain a close and professional working relationship with the kitchen at all times
Responsible for training and development of staff through orientation of new staff, ongoing feedback, establishment of performance expectations and by conducting performance reviews.
To inspect all service staff at the start of the shift to ensure they adhere to the grooming standards
To co-ordinate with housekeeping for proper, clean and adequate supply of restaurant linen as per
Supervise the update of the Specials menu board as advised by the Chef
To co-ordinate with engineering for maintenance of the fittings and equipment in the service area
Check customers are enjoying their meals and take action to correct any problems.
Ensure proper maintenance, cleaning and operation of the outlet and service equipment
To assist with the training of Restaurant staff including holding annual performance reviews
To support other supervisors and colleagues at peak times and to undertake any operational duty which might be reasonably required, to ensure customer expectations are met.
To participate in any training/development schemes required by management
Participate in the hotel’s social responsibility programme
To follow the house rules and policies laid down by the management
To comply with company regulations as stipulated in staff handbook, regarding uniform, timekeeping and general conduct.
To comply with any statutory and legal requirement for fire, licensing, health and safety and to ensure that you are working in accordance with these requirements
Job Requirements
Required education: Diploma, Associate's degree
Required relevant work experience: 2 years
